Serving size: 2 Tacos
1 green bell pepper
1 red bell pepper
1 small onion
1 small yellow or green zucchini
Taco Seasoning Packet
2 Tbs water
corn tortillas
shredded lettuce, fresh diced tomatoes, salsa and sour cream for garnish
Chop all veggies into relatively the same size pieces. Heat a large skillet to medium/high heat. Coat Pan with Olive Oil Spray. Add all veggies and stir for 30 seconds. Then add all the spice packet and stir for 30 more seconds. Let the veggies continue to cook about 3 more minutes at that heat. Add 1 Tbs water and stir (this will de-glaze the pan). Cook 3 more minutes then add another Tbs of water and stir. Turn heat to med/low while you prepare the garnishes.
To Serve: Spoon veggie mixture onto a corn tortilla, top with garnishes and eat!
Note: Choose a sour cream that has minimal ingredients and only use 1/2 Tbs on each taco. Choose corn tortillas that include corn, water, lime, and salt as the ingredients. Avoid all of the crazy added ingredients that can often be found in normal everyday packaged food!

Shrimp Ceviche
Some people can't deal with the "cold shrimp" meal, but I'll tell you what... this is one of the most healthy, lean, clean, fresh, diet friendly, nutritious recipes you can make! It is so great in the summer especially now that it is getting hot in AZ! Give this a try. It will give you a great opportunty to work on your knife and chopping skills and once you taste it you will feel so accomplished that you made something so "gormet."
