Fruit Dip and Vegetable Dip makeovers

When we have social gatherings or parties we almost always give someone the "chips and dip" assignment. it is a common known fact that most chips are fried, processed, and full of sodium. And dips aren't better one bit. The mayonnaise or sour cream based dips are full of fat.... and seasonings. Yummmm seasoned fat! No way! As far as fruit dips they are just fat sweetened with equal parts sugar. If you are trying to eat healthier, lose weight, or just increase your consumption of fruits and vegetables, don't even default to having those items at your party. Eat healthier and help others do it too!

Vegetable Dip makeover
1 cups Low-fat Cottage Cheese
2 teaspoons Italian Seasoning
1/4 teaspoons Pepper, Black
Serve with
2 servings Whole Wheat Pita
AND
1/2 cups Carrots, Raw
1/2 cups Celery
1/2 cups Cucumber
1/2 cups Cherry Tomatoes

Fruit Dip makeover
6 ounces fat free sugar free yogurt (8 oz is fine too) (the Yoplait light works great for this)
1 (8 ounce) package fat free cream cheese
2 (1 g) packets Splenda sugar substitute
Serve with
Strawberries, Watermelon, Pineapple, and Grapes (or your favorite fruits)

Black Bean and Corn Salsa with Avocado

I got this recipe from my friend, Sarah Overson, and it is always a hit when i bring this to any type of party/function/gathering!! It is so easy, so healthy, soooo good. It is more of a dip than a salsa because it isn't spicy at all and its very thick, but lets get to the point here!!

2 cans diced tomatoes
1 can black beans (drained and rinsed)
1 can golden corn (drained)
2 avocados;ripe, but not mushy (diced into cubes about the size of the tomatoes)
1 packet of Zesty Italian seasoning
salt and pepper to taste ( I'd go with 1/4 tsp of each, but some people are salt maniacs)

Mix all together, mixing in avocados in last to avoid over smushing them...
Serve with tortilla chips

Enjoy!

Turkey Roll-ups

This makes enough for 1 person. It takes very few ingredients so many servings can be made at a time!
Prep Time: 2-3 minutes

2 Large slices peppered turkey from the deli (about 8 inches in diameter)
2 thin slices of provolone cheese
1/2 cup spinach (chopped to confetti consistency:1/4 cup per rollup)
2 Tbs honey roasted slivered almonds(1 Tbs per rollup)
2 Tbs dried cranberries(1 Tbs per rollup)
2 Tbs of your favorite vinaigrette(1 per rollup) I use Brianna's blush wine vinaigrette, its delectable

1) Layer the ingredients in the order they are listed, starting with the turkey, ending with the vinaigrette.
2) With your fingers, pick up the edge of the turkey and GENTLY roll up all of the ingredients (like a taquito)
3) Enjoy.

Tip: This makes for a great snack during the day. Try to pre-pack your snacks so you avoid grabbing processed snacks that are usually loaded with sugar, salt, fat, and preservatives.

1 orange peeled and chopped
3 kiwis peeled and chopped
8 oz canned crushed pineapple (drained)
2 green onions chopped
1/4 cup green pepper chopped

Directions: Mix all of the above together. Chill for 10 minutes. Serve with Cinnamon Crisps.

Cinnamon Chips:
Tortillas
1/2 cup granulated sugar
1 tsp cinnamon
melted butter

brush butter over tortillas, Sprinkle with cinnamon sugar, broil until light brown. keep your eye on them while they are under the broiler so they do not burn!

TIP: Try spraying tortillas with butter flavored cooking spray to save some calories. Also, use whole wheat tortillas or whole wheat pita chips for a healthy alternative. Enjoy!!
