Green Chili Roast

2-3lb beef or pork roast (I think beef is best)

1 can of rotel tomatoes with green chiles
1-2 cans of chopped green chiles

Cook all ingredients in crockpot on low for about 8-10 hrs.

Shred meat and serve with low carb tortillas and sour cream or over a bed of lettuce with garnishes.

Easy & yummy!
