Chop chocolate squares into chunks and microwave until melted. Usually 30 seconds, stir, then another 30 seconds. Add chocolate mixture to the milk mixture. The chocolate doesn’t completely dissolve and look smooth – it looks like chocolate floaties – you will fix this in the blender.</div><div align="center" class="MsoNormal" style="line-height: normal; text-align: center;">Chill the mixture in a pan of ice water until it reaches room temperature. Use a strainer to strain it into your blender. Press the extra chocolate mixture through the strainer as much as you can. Add the Egg Beaters and vanilla. Blend until mixture is completely smooth – no chocolate specks. Refrigerate for a few hours before freezing in ice cream maker. Follow instructions on ice cream freezer. It makes 1 quart and is perfect size for small ice cream freezers. Chop all veggies into relatively the same size pieces. Heat a large skillet to medium/high heat. Coat Pan with Olive Oil Spray. Add all veggies and stir for 30 seconds. We were starving so, Michael ordered the BBQ Pork Nachos. Sounds interesting... tastes fantastic. My brother liked them so much he asked for an order of them for himself.<br />

There were so many great textures. Gooeyness, crunchiness, and tenderness. It was salty, sweet, and tangy. <b style="font-family: Verdana,sans-serif;">EXCELLENT</b>. The downfall....<br />
<b style="font-family: Georgia,"Times New Roman",serif;">Fried tortillas, lots of fat, calories, salt, and sugar.</b> You wouldn't think there would be sugar, but most thick BBQ sauces are full of brown sugar and molasses. This was a challenge worth taking and actually ended up being very very easy!!! My BBQ Nachos Makeover Recipe is below! Enjoy...<br />

Makes 4 Servings<br />
<b><i>You will need:</i></b><br />
12 corn tortillas<br />
Olive oil or olive oil spray<br />
1 tsp or so of sea salt <br />
1 14oz can beans<br />
2 cups cooked and shredded chicken or pork<br />
1/2-3/4 cup BBQ sauce<br />
1/2 cup grated cheese<br />
shredded lettuce for topping<br />
diced tomatoes for topping<br />
Diced jalapenos or green chiles for topping<br />
<br />
<b>1)</b> Cut tortillas into 4 triangles or squares, whatever you prefer. Make sure you buy the tortillas that only have 3 or 4 ingredients (Ex: Corn, Lime, Salt)<br />
<br />
<b>2)</b> Spread these cut strips on to a LARGE cookie sheet, spray with Olive Oil spray and sprinkle with sea salt.<br />
<br />
<b>3) </b>Bake in a 400 degree oven for about 5 minutes. (you don't want them to turn any shade of brown, that means they are burnt and gross so watch them closely)<br />
<br />
<b>4) </b>Let them cool and crisp up while you combine the following in medium sized sauce pan<br />
1 14oz can of beans, rinsed and drained (I like black beans, you can use pinto as well)<br />
2 cups of shredded chicken or pork (great way to use left over cooked meat the next day)<br />
1/2-3/4 cup of BBQ sauce (use your favorite, but watch out for brands that contain a lot of sugar and additives)<br />
<br />
<b>5)</b> Toss meat, beans and sauce together in the pan over medium/high heat until warmed.<br />
<br />
<b>6)</b> Spoon mixture over baked tortilla chips in blobs until you reach your desired amount (you may not use all of the mixture, and that is okay, you will have more leftovers!!!)<br />
<br />
<b>7)</b> Sprinkle grated cheese over the bean mixture and place under the broiler until cheese is melted (probably less than you're used to, that's good. Cheese should be in moderation!)<br />
<br />
<b>8)</b> Remove from oven and top with shredded lettuce, diced tomatoes, and diced jalapenos or green chiles.<br />

<b>9)</b> Get messy and chow down!!!<br />

I ordered "Rama Chicken" Sauteed chicken on a bed of spinach and vegetables, topped with peanut sauce. They say "topped, " but it was immersed in the delectableness. I have had many peanut sauces and this one was different. It was more savory than sweet, which I really enjoyed. Chicken and vegetables were perfectly cooked. My mom ordered "Garden Sweet and sour" and it was super scrumptious. Sauce was amazing and the variety of vegetables was good. I inhaled every drop. my mom got a doggie bag. I love it- grazing, munching, and nibbling is a hobby of mine. The problem is that most "snack" type foods are very calorie dense and provide little nutritious value. You can snack before a meal and think it "didn't count"... But in reality you could have consumed more calories then, than you will when you sit down to eat. So, you are trying shed some pounds, or cut back on sugar, or what ever your health quest is at the time. What do you do?<br /><br />Enjoy these tips. they work for me:<br /><br />1) Don't go to the cracker, cookie, poptart isle of the grocery store, Just keep walking!<br /><br />2) LOAD up on fresh fruit and vegetables and chop them up into convenient snack-size pieces so they are readily available when a snack attack occurs.<br /><br />3) Make a habit of drinking a HUGE glass of water with your snack. This way, you won't have the need to keep looking in cupboards and opening the fridge for more. Water fills you up!<br /><br />4) Fat. Even though many people think fat is an enemy, it needs to be consumed at every meal to keep you full for more than one or two hours. Some ideas: Peanut butter on toast instead of jelly, avocado on your turkey sandwich, or olive oil in your salad dressing. Fat is good for you, just eat the right portions of it!<br /><br />5) Think...<br />If you are grazing out of boredom, go do something!! If you are hungry eat a snack. She specializes in all-natural cooking and lifestyle with an emphasis in helping people with food allergies and tolerances. She brought me along to do a restaurant review with her. Sometimes Thai restaurants can have a bad smell when you first walk in the door. Wild Thaiger had a "good grub" smell as soon as I walked in the door. You can see the chefs cooking and hear the sizzling of yummy food being seared. Lunchtime made for a full house and there was not an empty table! This dish was overflowing with exotic vegetables, tender meat, and rich sauce. Perfect heat, texture, and flavor. I am a huge fan of peanut sauces and Wild Thaiger's is very scrumptious. An important note is that there were no overpowering after tastes to where you feel like you taste it for the rest of the day. This dish was so colorful. rich, and spicy. This is a creation of mine. Being a super food nerd and being married to the pickiest eater on the planet, i must come up with ways to fix food that both of us can enjoy. This was a cheap, yummy, easy, and different success. To serve 4 people, you will need:<br />
<br />
A pre-heated 350 degree oven<br />
4 boneless skinless chicken breasts <br />
4 Tbs of pesto (I love the Fresh and Easy brand that comes in a little jar)<br />
1 cup of your favorite spaghetti or marinara sauce<br />
1 cup of shredded mozzarella cheese (you may need a little more for topping)<br />
2 Tbs of oil<br />
Salt, pepper, and garlic powder<br />

Step One: Using some heavy object, pound out the chicken breasts until they are approximately 1/4 inch thick. It is smart to put the chicken in a zip lock back or cover it with plastic wrap while doing this.<br />
<br />
Step Two: Spread the pesto across the flattened chicken breast (Just like butter on toast)<br />
<br />
Step Three: Layer mozzarella on top of the pesto<br />
<br />
Step Four: Fold the chicken and fasten it with tooth picks to keep the cheese and pesto from oozing out<br />
<br />
Step Five: Season chicken with salt pepper, and a little garlic powder on both sides <br />
<br />
Step Six: Heat up the oil in a pretty hot and big pan and brown both sides of the chicken. You do not want to cook the chicken, just give a nice color to the outside.<br />
<br />
Step Seven: Pour half of the marinara sauce in the bottom of the baking dish, Place chicken in the baking dish and Pour other half of the sauce on top and sprinkle a little more cheese on top.<br />
<br />
Last: Bake this beauty for 30-35 minutes or until chicken is firm, but not hard and you can poke a knife through the thickest part.<br />

There you go! You will need:<br />
<span style="font-weight: bold;">An Acorn squash<br />
TBS oil<br />
TBS honey<br />
tsp apple cider vinegar (optional, but I love)<br />
S&P</span><br />

As for servings, I did manage to consume one entire acorn squash myself, but I would say one acorn squash could serve 2-3 people, depending on the size and if you treat it as a side dish or main dish. <br />
<br />
1) Preheat oven to 350 degrees.<br />
2)Slice acorn squash in half and scoop out seeds. <br />
3)Place face down in a baking dish, Bake for 35-40 minutes<br />
4)Remove from oven and turn the squash over (facing up)<br />
5) Place S&P, oil, honey, and apple cider vinegar in one half of squash and place the other half back on top. <br />
6) Bake an addition 30 minutes at 350 degrees.<br />
7) Take out, let cool, open squash and drizzle remaining sauce over the two halves.<br />
8) Take a spoon and eat it right of its shell...<br />
